Balsamic Glaze

Description

Balsamic glaze may sound a little foo foo but this flavorful condiment is used in my house on every thing from spinach salad, cooked greens, tomatoes, chicken, pork and is perfect on grilled fruit like pineapple.  Let's face it, you probably don't eat enough greens or fruit so make this and you will eat more of the good stuff.

3 Bottles store bought Balsamic Vinegar (I usually purchase Whole Foods 365 brand balsamic vinegar)
1 Squeeze bottle

Methods/steps

  1. Pour 1 bottle balsamic into a wide skillet or pan. I use my saute pan because it has straight sides. Put a wooden chopstick standing straight up into the balsamic and use it as a measuring stick. It should now be stained with the vinegar. Set it on a cutting board and cut a small notch in the stick. You now have a perfect measuring stick.
  2. Add the other two bottles and simmer over low heat. The vinegar doesn't need to bubble but some small bubbling won't hurt.
  3. Cook it down until it's about 1/3 the original volume (use the measuring stick to know for sure).
  4. While the vinegar is still warm pour CAREFULLY pour it into a squeeze bottle. If it doesn't all fit pour the excess back into one of the original vinegar bottles.

Additional Tips

Oh, you may want to open a window. The smell doesn't stay in the house but it's strong coming off the stove.

If you had to store some of the glaze in the original bottle it will be quite think and difficult to move so just put the bottle in a sink full of hot water until it thins. Then it will pour easily.
