Beef And Broccoli Stir-Fry

Description

Great tasting beef and broccoli is a quick and healthy dish that can satisfy your cravings for Chinese food which is often over oily and salting in the USA.

Ingredients

1 pound broccoli cut into florets with the root trimmed and cut into thin slices
1/2 pound flank steak sliced 1/8 thin across the grain into 2 inch slices
1 tsp sherry
1 T light soy sauce
1-2 T oyster sauce (watch your sodium levels)
1 tsp sesame oil
1 T canola or peanut oil
1/2 tsp corn starch mixed with 1 T water
3 cloves garlic sliced
1/2 inch piece ginger minced
1 T additional water

Optional and Recommended
1/2 red pepper
1 medium onion or 2-3 spring onions

  1. Marinate the sliced beef with the soy sauce, cover and keep in the refrigerator for 10 to 30 minutes.  Mix the sherry, oyster sauce, sesame oil, cornstarch and 1 T water into a cup or small bowl.
  2. Drain the beef and pat dry with a paper towel.  Stir-fry in a tsp of oil and when done, remove from pan and set aside.
  3. Add 1 tsp oil and broccoli to the pan and stir-fry for 30 seconds.  Add 1 T water, cover and let steam for about 2 minutes.
  4. Move broccoli to the side of the pan and add the last of the oil, red pepper and onion (not the spring onion) if using and stir fry for 1-2 minutes until browned.  Add garlic and ginger and stir for 20 seconds or until fragrant.  Stir garlic mixture into vegetables, add beef, stir the sauce mixture and pour into the pan along with spring onions if using.  Stir everything together until well coated and the sauce turns into a nice glaze and serve.

Additional Tips

I love adding red pepper flakes and black pepper to this dish but my lovely wife prefers it without so I don't.
