Beef Fajitas

What's better the savory beef fajitas stuffed into warm tortillas and filled with smoking grilled peppers and onions?  This meal is surprisingly low in fat and calories and packs in a bunch of vitamins and minerals.

Ingredients

1 1/2-2 pounds flank steak
2-3 limes
1 tsp ground cumin
4-5 bell peppers (mix of colors) sliced into strips that won't fall through the grill grate
2 large or 3 medium onions sliced into 1/2 inch thick rings
fresh ground black pepper
12 to 16 corn tortillas

Methods/steps

Sprinkle both sides of flank steak with the lime juice.  Set aside and go start your grill.  When the grill is ready, pat the steak dry with a paper towel, sprinkle with the cumin and some salt and pepper.  Grill over high heat with the lid closed about 5 to 6 minutes until the steak is charred on one side.  Then flip over and grill for another 3 to 6 minutes depending on how you like your steak.  Put the steak on a plate and tent with foil.

Add the vegetables to the grill and keep over high heat until they're starting to brown and even have a few block spots on them about 4 to 5 minutes per side.  When the vegetables are done cut the onion rings and half and you may want to cut the peppers further depending on how big they were.

Serve with hot sauce, gold beer, black beans, brown rice, salsa and maybe some guacamole and cilantro.

Additional Tips

I know some recipes call for marinating the beef in all kinds of ingredients and as long as over night but that's not my style.  I like the flavor of beef on a grill and all that other stuff just interferes.
