Breakfast Burrito

Low fat breakfast burritos are fast, easy to make and will make you forget you're eating like a fat guy on a diet.  The truth is that I'll put just about any leftovers in my breakfast burritos such as any greens, beans, meat, seafood, vegetables and even a little pasta.  Try this one and experiment later.

Ingredients

At a glance
Makes
2 Burritos

4 eggs
2 whole grain tortillas
2 slices of your favorite low fat cheese
2 - 3 T of your favorite salsa

Optional ingredients
Spring onions
Black beans
Cilantro
Chilis

Hot Sauce!

Methods/steps

Beat the eggs in a bowl.  You can add 1 T water if you choose and pour into a non-stick skillet.  Season with salt and pepper if you like.  Stir with a wooden spoon or spatula until almost cooked.  Top the eggs with the tortillas for about a minute to warm them.

Put a tortilla on a plate, add half the eggs, a slice of cheese and some salsa.  Roll up and do the same with the other tortilla.
