Buffalo Balls And Spinach Pasta

I made buffalo meat balls the other day and they rocked.  Mixed with spinach they made the perfect hearty pasta dish to satisfy this Fat Guy.  I had the ground bison in the fridge because it was on sale and my lovely wife wanted to use it for something but never did.

Ingredients

Meat Balls
1 lbs of ground bison or lean beef
1 cup of whole grain bread crumbs
1 egg
1/2 medium onion minced (or more if you like)
1 tsp garlic powder
1 tsp wochestershire
1 tsp brown mustard
black pepper and salt to taste

Pasta
12 ounces whole grain pasta of your choice
1/2 lbs mushrooms
1/2 onion sliced pole to pole or more if you like
12 oz spinach, cleaned and drained
3 cloves garlic sliced
1/2 cup fresh herbs such as parsley, basil or sage

Methods/steps

Gently combine the meatball ingredients.  You want it mixed together but not like smashed together.  Then make into small balls and fry over medium heat for about 10 minutes total.  I didn't use any oil and they seemed to brown up OK.  Just turn them every couple of minutes to get them brown all over.

When they done put put the pasta in enough boil water and cook following package directions.

Sautes the mushrooms and onions until the mushrooms start to brown.  Then add the garlic and stir for about 30 seconds.  Add the pinch, a little salt and pepper and keep cooking.  If the spinach is wet then leave the lid off but it's pretty dry then add a little pasta water (1 - 2 TBS) to pan and cover.

After about 2 minutes the spinach should be cooked.  Add the cooked pasta and about 1/2 cup of the pasta water.  Stir everything together and put it in a bowl to serve.

 

Additional Tips

I really wanted some hot pepper flakes in this dish but the pretty ladies in the house wouldn't have appreciated that.
