Barley, Shrimp and Saffron Risotto may not sound like a hearty meal but trust me it is.  It's much heartier then a soup and during the winter the warmth of the creamy barley can quickly become a comfort food that this fat guy loves.  Make this and you'll know why all the 4 star fancy restaurants have risotto on their menus.  I've made this dish with and without saffron and while I prefer it with, it's a great dish without.

Grilled Pineapple With Rum Sauce is not a sissy man's dessert but a guy's way of making something sweet and tasty for the ladies while still combining fire and booze.  What more could you want?

The healthy fish tacos fit perfectly into most diets because they're tasty, low calorie and most of us don't eat enough fish.  Corn tortillas don't have as much fat and calories as you might suspect so eat up.

Combing fruit and fire is my style of cooking.  Grilled Pineapple and Cantaloupe are perfect desserts if you have a hot grill and want to keep the entire family happy or impress your guests with your fire handling skills.

Grilled Salmon is the perfect fat guy food because it combines fire and red meat.  Well, maybe it's not really a cow but salmon is the red meat of fish and you at least still have fire.  Every guy should spend a little time learning to grill salmon because it's easy, it looks fancy and you get to grill something and still eat very healthy.

Italian Greens, Beans and Bacon Pasta is a very hearty Italian classic dish and this recipe makes it healthier for you too.  You have hearty greens, filling beans and the flavor of bacon added to your pasta.  What more could you want?

After eating leftover turkey and dressing for a couple of days you might appreciate this recipe because it adds a spicy twist that you may have been missing during the holidays.  Tomatillos and turkey are excellent together so this is a perfect recipe to use up that leftover turkey.

Hummus is a great way to get some extra cholesterol lowering fiber in a low fat dip that can easily double as a spread for sandwiches. While you can serve this with bread, toast or crackers you might want to try adding it to a veggie platter with carrots, celery or bell peppers.

I almost always double this recipe because it keeps in the refrigerator for a long time and it's versatile for snacks, lunches, dinners and hummus on whole grain toast makes a hearty breakfast.

This makes a great sauce right in the pan and is basically hand off for the last 10 minutes of coocking so you have time to finish anything else.  On New Years Eve when Alana and Genna were over I used that time to enjoy a glass of wine Wink

My 4 year old daughter loves this no sugar added berry syrup and has no idea there's no sweeteners added to it.  My wife sneaks a little honey but since her father raises bees she sneaks honey on everything.  Put this on the stove before you start cooking french toast or pancakes and will be hot and ready by the time those are done.

This is an adaptation of one of my favorite tilapia dishes. By steaming the fish instead of pan frying the flavors combine much better, the dish is much easier to make and you can also cook this on the grill or as a casserole.  You can easily halve this dish or double it depending on how many you're feeding.

This low fat red cabbage slaw is an excellent add to your healthy diet plan because it's fast, flavorful and easy.  This is a great addition to fish tacos, fajitas, sandwiches or just served with beans and chicken.

These are not hte pickeled beets of you past that bled into everything on the plate.  These are sweet, delicious and go well with just about everything. A few friends go on and on about how wonderful these are so maybe you should try them.

Cauliflower was never one of my favorite foods until I discovered roasting it because it give it a deep rish flavor!  Now I love it and my wife keeps asking for it.  This recipe is easy, takes almost no prep time and it's a great way to eat this vitamin packed veggie and a cup of cauliflower has less then 30 calories and almost 3 grams of fiber.  Eat up.

I seem to enjoy this as much the next day right out of the fridge as I do when it's hot and a little sprinkle of sherry vinegar is nice.
