Barley, Shrimp and Saffron Risotto may not sound like a hearty meal but trust me it is.  It's much heartier then a soup and during the winter the warmth of the creamy barley can quickly become a comfort food that this fat guy loves.  Make this and you'll know why all the 4 star fancy restaurants have risotto on their menus.  I've made this dish with and without saffron and while I prefer it with, it's a great dish without.

What's better the savory beef fajitas stuffed into warm tortillas and filled with smoking grilled peppers and onions?  This meal is surprisingly low in fat and calories and packs in a bunch of vitamins and minerals.

I made buffalo meat balls the other day and they rocked.  Mixed with spinach they made the perfect hearty pasta dish to satisfy this Fat Guy.  I had the ground bison in the fridge because it was on sale and my lovely wife wanted to use it for something but never did.

Guys, you can eat beef and still lose weight but you have to choose your beef wisely.  This is a great recipe for cooking a low fat steak and packing plenty of flavor into it.

I love pork tender tenderloin and this recipe rocks.  The other white meat, red meat, this fat guy doesn't really care as it's delicious, low in fat and calories.  A 1 oz. serving has less then 40 calories and 10 from fat.  That means dig in!

After eating leftover turkey and dressing for a couple of days you might appreciate this recipe because it adds a spicy twist that you may have been missing during the holidays.  Tomatillos and turkey are excellent together so this is a perfect recipe to use up that leftover turkey.

This is an adaptation of one of my favorite tilapia dishes. By steaming the fish instead of pan frying the flavors combine much better, the dish is much easier to make and you can also cook this on the grill or as a casserole.  You can easily halve this dish or double it depending on how many you're feeding.

These are not hte pickeled beets of you past that bled into everything on the plate.  These are sweet, delicious and go well with just about everything. A few friends go on and on about how wonderful these are so maybe you should try them.

Cauliflower was never one of my favorite foods until I discovered roasting it because it give it a deep rish flavor!  Now I love it and my wife keeps asking for it.  This recipe is easy, takes almost no prep time and it's a great way to eat this vitamin packed veggie and a cup of cauliflower has less then 30 calories and almost 3 grams of fiber.  Eat up.

I seem to enjoy this as much the next day right out of the fridge as I do when it's hot and a little sprinkle of sherry vinegar is nice.

This peperonata is sweet, tasty, colorful and low in fat. This Italian staple takes on a new dimension with some sweetness I add and makes a great companion to grilled meat, roast pork, some lean sausages or even just part of a platter served with bread or crackers.

I love these spicy little beans and this is the easy recipe that I know to make them because you let the oven do the work while you're cooking something else and then just sauce them at the end.

This fat guy prefers this fried rice over any other I've had and many friends request this when coming over and claim that this is the best!  The list of ingredients may seem long but it's not as bad as it seems.  I highly recommend that you put the chopped garlic and ginger in small bowls to keep them out of the way.
