1 pineapple cored and sliced into 3/8 inch rings
1/2 cup rum (coconut flavored if you like but I prefer the regular stuff)
1/4 cup dark brown sugar
1 tsp vanilla extract
1/4 tsp Chinese five spice powder or all spice
Combine rum, sugar, extract and spice in a flat baking dish making sure everything is stirred together well. Add the pineapple making sure to turn the slice to get them well coated with the sauce. Let marinate for at least 15 minutes and up to about 45 minutes so you can do this before you start cooking other things.
When it's time to grill the pineapple, make sure that you're grill is clean and very hot. Grill the pineapple leaving the lid open for about 4 minutes per side. You really just want nice dark grill marks which brings out some great flavor. If you cook the pineapple too much it will be mushy.
You can drizzle with a little honey if you like before serving or serve this over frozen vanilla yogurt.
