Egg Foo Yung

Description

Egg Foo Yung is perfect for a fat guy like me that's trying to lose weight.  It's packed with protein, cheap, fast and easy (hmmm..... that reminds me of something else)

Ingredients

At a glance
Makes
3 - 4 servings

6 eggs lightly beaten
1 cup bean sprouts
1/2 minced onion or 3 thinly sliced scallions
1 stalk celery sliced thin
1 cup of ham, turkey bacon, left over chicken or shrimp
1 tsp soy sauce

 

Sauce
1 cup chicken broth
2 T soy sauce
1 T dry sherry
2 tsp rice wine vinegar
1 T cornstarch
1 tsp sesame seed oil

 

Optional
1/4 cup bamboo shoots
1/4 cup minced water chestnuts
1/2 cup of peas
1/2 cup diced carrots
Mushrooms

Methods/steps

  1. Cook the meat if needed and mix all of the omelet ingredients together.  Add a little oil to a 6" to 7" nonstick skillet and fry about 1/2 cup of mixture until brown on the bottom.  Then flip and cook another minute.
  2. As you remove the omelets/pancakes, keep them on a wire rack.  They'll get soggy on a plate.  Keep cooking 1/2 cup at a time until they're all down.
  3. While the eggs are cooking, whisk the sauce ingredients together and bring to a boil.  Then turn the heat down and simmer a couple of minutes.
  4. Serve the eggs with the sauce and it's great!

Additional Tips

Feel free to clean out your fridge a little bit.  You're making thin omelets or egg pancakes and just about everything goes well with them so if you a little cooked spinach, green beans, bell pepper or whatever use it here instead of throwing it away.
