Fish Tacos

Description

The healthy fish tacos fit perfectly into most diets because they're tasty, low calorie and most of us don't eat enough fish.  Corn tortillas don't have as much fat and calories as you might suspect so eat up.

Ingredients

8 Tacos

1 1/2 lbs white fish such as Tilapia, Halibut, Shark or Mahi Mahi
2 limes juiced
1 tsp ground cumin (fresh is best)
1-2 tsp canola oil
8 corn tortillas

Condiments
Red Cabbage Slaw
Sliced radishes or Daikon (Japanese radish)
Hot sauce or sliced hot peppers of choice (jalapenos)
Low fat yogurt

Methods/steps

  1. Wash fish, pat dry with a paper towel, place in a glass baking dish or seal-able plastic bag.  Add lime juice and cumin.  Make sure the fish is coated evenly and allow to marinate in the refrigerator for 30 minutes to an hour.  (time to get everything else ready)
  2. If using Tilapia then pan fry each piece of fish in a tsp of oil over high heat for 2-3 minutes per side until it flakes easily.  Cook the fish in two batches to not over crowd the pan.  If using thicker fish then rub the fish with a little oil and grills over high heat for 5 minutes per side until flaky.
  3. Serve 2 corn tortillas with 1/8 of fish and condiments.
