Greens, Eggs and Ham

Green eggs and ham was one of my favorite stories growing up and greens were always part of my diet growing up so it's no wonder that I love this recipe.  You can leave out the ham as the mushrooms add plenty of flavor but I like for sentimental reasons.

Ingredients

12 oz spinach, kale or collard greens washed and drained
4 slices ham or Canadian bacon
4 poached eggs
12 oz mushrooms sliced (white, cimini or shitake)
1 medium onion sliced thin pole to pole
1 clove garlic minced
1 tsp oil

Optional
4 slices of whole grain toast
Pinch of freshly grated nutmeg
Red pepper flakes

Methods/steps

  1. Heat the ham by either quickly frying in a non-stick skillet or using a microwave.  I usually use a skillet without any oil.  Set aside until reading to serve.
  2. Cook the mushrooms in the oil over medium heat a few minutes until they start to shrink and brown.  Add the onions and stir for 3 minutes until starting to soften.
  3. Add the minced garlic and stir for 30 second until fragrant.  Add the greens of choice, a 2 T water, stir well and cover.  Spinach takes about 3 minutes and collard greens or kale will take 5 to 6 to cook through.
  4. Layer 4 plates each with a slice of toast (if using), a layer of ham or Canadian bacon, 1/4 of the greens mixture and top with a poached egg. 

Additional Tips

If using nutmeg add it ass soon as you add the greens.  If using red pepper flakes add it along with the garlic.
