Italian Greens, Beans and Bacon Pasta

Description

Italian Greens, Beans and Bacon Pasta is a very hearty Italian classic dish and this recipe makes it healthier for you too.  You have hearty greens, filling beans and the flavor of bacon added to your pasta.  What more could you want?

 

Ingredients

4 to 6 Servings

12 oz. dried whole grain pasta such as spaghetti or linguine
1 Head escarole chopped or turn into bite sized pieces and cleaned
1 15-19 oz. can canelli beans drained and rinsed
1 medium yellow onion
1 T olive oil
1-4 cloves garlic (your choice really)
4 oz. turkey bacon chopped into 1/2 inch pieces
1/4 cup parmesan cheese grated
1 tsp red pepper flakes (optional)

Methods/steps

  1. Cook pasta according package directions very al dente and when you drain the pasta, save about 1 cup of the pasta cooking water.
  2. In a dutch oven or 4 qt. saute pan over medium heat cook the onions and turkey bacon until soft and starting to brown. Add the pepper flakes if using and the chopped garlic. Stir until fragrant.
  3. Add the escarole, white beans, freshly cooked pasta and parmesan. Stir. If mixture is too thick add some of the pasta cooking water. Salt and pepper to taste and serve.

Additional Tips

I like to serve this with lemon wedges, Tabasco, toasted bread, whole grain bread crumbs and my balsamic glaze on the table. This goes well with tomato salad.
