Leftover Turkey Enchiladas

After eating leftover turkey and dressing for a couple of days you might appreciate this recipe because it adds a spicy twist that you may have been missing during the holidays.  Tomatillos and turkey are excellent together so this is a perfect recipe to use up that leftover turkey.

Ingredients

2 cups chopped or pulled cooked turkey or chicken - warmed a little in the microwave
1 cup salsa verde
2 10 ounce cans enchilada sauce
2 cups shredded low-fat cheese such as Monterey Jack or Swiss
2 spring onions sliced

Optional

Chilies or jalapenos
1/4 cup Cilantro but my wife doesn't like it so much
Lime wedges for garnish

Methods/steps

  1. Preheat over to 350 degrees.
  2. Mix the turkey, salsa verde, cilantro (if using) and about 1/4 of the cheese.  Set aside in a bowl.
  3. Heat the enchilada sauce so it's warm but not boiling.  Then working with one tortilla at a time, dip the tortilla into the sauce for about 10 seconds, then move it to a plate, mix in about 1/4 cup of the turkey mixture, roll up and place seem side down in a baking dish.  Repeating with all 12 tortillas.
  4. Pour the rest of the sauce over the enchiladas and sprinkle with remaining cheese.  Bake for about 15 minutes until the cheese is nice and bubbly.  Sprinkle with onions and serve.

Additional Tips

This is great with black beans, brown rice and you can even shred some lettuce on the side and top it with canned chopped tomatoes.
