This low fat dressing was created one night when my wife was out of town and I was bored. It turns out to be really good and friends love it. This is really nice with a salad topped with grilled chicken.
1/2 cup apple cider
2 T balsamic vinegar
1 clove garlic
1 T capers rinsed
1 T mustard (I use Dijon but any brown mustard should work fine)
Optional
A little anchovy paste or 2 fillets minced
Mince garlic and capers by using a blender, garlic press or knife. Get them as small and smashed as you can. Mix first 4 ingredients and whisk in mustard.

Guys, you can eat beef and still lose weight but you have to choose your beef wisely. This is a great recipe for cooking a low fat steak and packing plenty of flavor into it. |
