Low Fat Garlic Shrimp

Description

This Garlic Shrimp recipe has been lighted to avoid using so much olive oil but I can assure you that it satisfies this fat guy when he wants shrimp.  When making tapas I like to peel the shrimp completely before cooking.  When making as a main course I like to peel them after cooking while eating.

Ingredients

4 Main Course or 10 as Tapas
1 1/2 lbs of large to extra large shrimp - peeled and brined or unpeeled (see note below)
10-14 cloves garlic
1/3 cup Kosher salt
1 T olive oil
3 T dry sherry
1-2 tsp smoked paprika

Methods/steps

Mix 1 quart of water with Kosher salt and all but 4 cloves crushed garlic.  Add the shrimp and refrigerate for 30 minutes.  Drain the shrimp and pat dry.  Either peel at this point or slice the shell down the back.  Devein shrimp if desired.

Add the olive oil to a wide pan over medium high heat.  Add the smoked paprika and stir a few seconds then add the shrimp.  Cook the shrimp for 2 minutes on one side.  Add the garlic, turn the shrimp over as fast as you can.  Add the sherry to the hot pan and let it boil down.  After about 3 minutes the shrimp are ready to eat.
