Low Fat Greek Salad

Greek salads are wonderful but too often they don't fit into a healthy diet because they're dripping oiling dressing.  This low fat Greek salad recipes lightens the load but not the flavor.

Ingredients

4 Servings

1 head of romaine or iceberg lettuce
1/2 red onion thinly sliced
1-2 cucumbers sliced or cubed and peeled if you like
1 cup flat leaf parsley
1 tsp dried oregano or 1 T fresh
2 lemons
2 tomatoes cored and cut into 8 wedges each
Pepper to taste

Optional
1/2 cup pitted kalamata olives
2 oz finely grated parmesan or 4 oz. crumbled low-fat feta

Methods/steps

  1. Wash, dry, chop the lettuce and add it to a large bowl along with the onion, cucumbers, 1/2 of the parsley, oregano, a little black pepper and the option ingredients.
  2. Wash both lemons and zest them making sure to just get the yellow part of the skin by using a grater or micro-plane.  Add 1/2 the zest to the salad then juice both lemons into the salad.  Mix well tossing with salad tongues or your clean hands.  Garnish with tomatoes wedges.
  3. Mix the rest of the zest and parsley together to serve at the table with a grinder of black pepper.  Enjoy!

Additional Tips

The lemon juice helps the seasonings stick to the lettuce and when I've served this people don't seem to ask where the oil went.  This salad is fresh tasting and bright.
