Low Fat Salad Nicoise

Description

Low Fat Salad Nicoise is a wonderful way to pack a lot of vitamins into healthy diet and the canned tuna offers enough lean protein to make this a meal.

Ingredients

At a glance
Makes
8 Starter Salads or 4 Meal Size Salads

12 oz. of salad greens (romaine or spinach work well)
2 cans water packed tuna (I prefer the "Solid" over the "Chunk")
8 - 10 oz. of fresh or frozen green beans
2 hard boiled eggs quartered
8 small potatoes
1/2 small red onion thinly sliced
1 tomato sliced in 8ths or some cherry tomatoes
1 T capers rinsed
Balsamic glaze, sherry vinegar dressing or apple cider dressing

Optional
8 anchovy fillets
1/2 cup salty black olives
lemon wedges

Methods/steps

  1. Bring 2 quarts of water to a boil, add a little salt and par boil the green beans for 2 minutes.  Remove them and place them in a bowl with cold water until they're no longer hot.  Rinse, dry and set aside.  Then add halved potatoes to the boil water and cook 10-12 minutes until you can insert a knife easily and cool them off and dry them the same way as you did with the beans.
  2. Build a salad by adding greens to a bowl, then all other ingredients leaving the tuna and the egg for last.  Drizzle with dressing of choice and serve.
