Pan Steamed Tilapia With Peppers And Onions

This is an adaptation of one of my favorite tilapia dishes. By steaming the fish instead of pan frying the flavors combine much better, the dish is much easier to make and you can also cook this on the grill or as a casserole.  You can easily halve this dish or double it depending on how many you're feeding.

Ingredients

4 Tilapia fillets (about 6 oz each)
2 onions sliced pole to pole
2 bell peppers (red or green or a mix) seeded and sliced into 1/2 inch pieces
1 carrot sliced
1 stalk celery sliced
2-4 cloves garlic sliced
3 T white wine, chicken broth or water
1/2 tsp dried oregano
Salt and pepper to taste

 

Methods/steps

  1. Put liquid in a large pan with a tight lid. Put vegetables in the pan and spread around evenly. Add garlic, dry oregano and salt or pepper. Place the fish on top over lapping the thin portion of fillets.
  2. Cook over medium high heat until the liquid just start to boil. Turn the heat to low and cover. Simmer at very low heat for 15 minutes or until thick part of fillets flake easily with a fork.

If making a casserole for use in the oven or the grill put all ingredients in a disposable casserole and cover tightly with foil. Cook on cool side of a closed grill for about 20 minutes or in a 350 degree oven for 25 minutes.

Additional Tips

You can sprinkle the tilapia fillets with your favorite spices or add different herbs to the vegetables. Parsley, basil, chili powder and smoked paprika all work nicely.
