Roasted Cauliflower

Description

Cauliflower was never one of my favorite foods until I discovered roasting it because it give it a deep rish flavor!  Now I love it and my wife keeps asking for it.  This recipe is easy, takes almost no prep time and it's a great way to eat this vitamin packed veggie and a cup of cauliflower has less then 30 calories and almost 3 grams of fiber.  Eat up.

I seem to enjoy this as much the next day right out of the fridge as I do when it's hot and a little sprinkle of sherry vinegar is nice.

1 medium head cauliflower
1 T olive oil
Salt & Pepper to taste

Methods/steps

  1. Preheat an oven to 425 degrees.
  2. Cut the cauliflower into 8 equal size wedges by first cutting it in half, then each half in quarters from the root to the top.
  3. Brush or spray all cuts sides with a little oil and place on a baking sheet making sure that one of the cut sides is flat on the pan.  Sprinkle with a little salt and pepper and roast in the oven for 12 - 15 minutes.  Flip each piece over and roast for another to 10 - 12 minutes.

Additional Tips

I've tried this with dried oregano, curry powder, garam marsala and smoked paprika with great results.
