2 cups frozen peas
1/4 cup nonfat plain yogurt
2 cloves minced garlic
2 T minced red onion or shallots
1 tsp ground cumin
1 tsp rice wine vinegar or 1/2 tsp sherry or other wine vinegar
salt and pepper to taste
Drop the garlic and the onion into a spinning food processor as it will help mince it further. Then add the frozen peas and whirl. Add the rest of the ingredients scraping down as needed and process until it's smooth but still has some texture. It should be chunkier then humus.
Allow the flavors to blend for at least an hour. Since the peas are frozen I usually allow the mix to warm up on the counter but if it's a long time before serving put it in the fridge and pull it out 30 minutes before serving.
