White Bean and Tomato Compote

Description

Beans are cheap, low in fat and good for your heart even they do make you fart.  This makes a great side dish to every meat or fish dish that I've tried and it can even be served as a topping for bruschetta.

Ingredients

2 15 oz. cans canelli beans
1 14 oz. can diced or petite diced tomatoes
1 T olive oil
1 onion, medium to large diced a little smaller then the beans
2-6 cloves garlic chopped (I love it with 6 and no one has complained)
1 sprig fresh rosemary or 1 tsp dried oregano
Fresh ground pepper and maybe a pinch salt

Methods/steps

  1. Drain and rinse the beans as the liquid in the can muddies the flavor. Pour out most of the juice from the tomatoes (I usually drink this).
  2. Sweat the onions over medium low heat until soft in the olive oil. Add the garlic and stir until fragrant. Add the tomatoes, beans and herb of choice. Cook for a few minutes or longer if using a sprig of time. 5 minutes is enough for the flavors to blend but I've left it on warm stove for a lot longer.

Additional Tips

You can add some red pepper to onions, use bay leaf or sage instead of the herbs above and adding chopped black olives is pretty good too.
