Not only is this white bean dip low in cholesterol but it's filled with fiber and protein. This fat guy and his slim wife loves this on toast, bruschetta or my baked pita chips. It rocks!
1 15 oz can white beans drained and rinsed
1 to 3 cloves garlic
pinch of salt
1 T lemon juice
1 tsp sherry vinegar (optional but Steve's favorite)
1 T olive oil (optional traditional)
2 tsp fresh or 1 tsp dried rosemary or dill (optional)
1 T fresh parsley (optional)
In a food processor or blender drop in the garlic as the blade is spinning. Or just mince the garlic finely and add it with the beans. Puree the beans, garlic and lemon juice for about a minute. Scape down the sides if needed and add a pinch of salt and any of the optional ingredients. Continue to puree until smooth. You may need to add a little water to thin this out but you want it thick.

Guys, you can eat beef and still lose weight but you have to choose your beef wisely. This is a great recipe for cooking a low fat steak and packing plenty of flavor into it. |
Additional Tips
My wife loves this dip when I put just the sherry vinegar and none of the optional spices. I prefer a little parsley or something but like it just fine the way it is.
